



My best pizza sofar and first time using a peel for launching. The wife likes to load up the pizza and there is no rushing her while she builds it. I was worried that it would stick, but I lucked out thank God. Cooked on a Weber Genesis with the outside burners on high and the middle on medium. I layed out the fire bricks in a different pattern than usual and it work out much better than last time. After launching the pie I turned on the sear burner to high for some extra top heat. 10 minute cook with the turn halfway through. less

I like that raised brick setup and your burner strategy. I used to build my pizza on a thin pan with holes in it like [this](https://a.co/d/0IqwOJQ), put it right on screaming hot grates and then turn them all down to low. The residual heat got me a good cook in 8 mins without burning, but the top never got as well done as I liked. Then I found one of [these](https://a.co/d/d6VY8Yt) at a thrift store for $30, which really helped to concentrate the heat evenly top and bottom. But now I have to deal with the hassle of launching.
I was thinking a good step to try might be bricks like you have, but go back to my thin aluminum pan with holes. I can build the pie on that, put it right on the brick standoffs, and since it’s high in the grill it should cook more evenly than if I had it right on the grates. I guess it would be more like an oven pizza.
