

This is a follow up based on my previous post on some tough ribs that I cooked.
I tried again based on all the amazing feedback I got on the last post, but I am afraid that I may have overcorrected
I tried the 321 method, staying at 230 the entire cook. however once I unwrapped the ribs, they were falling apart tender. I quickly slapped some sauce on there, increased the heat and pulled them as soon as the sauce was set.
the result was amazing ribs, but insanely tender, to the point that I could just as well be pulled pork.
I will try again, and love the learning process.
dropped off some leftovers at the neighbors and they very much approved.

Don’t wrap. Pull when they pass the bend test.
Fire up a direct heat grill and put a hot sear on them and they will tighten back up quite a bit. Do it before saucing bc the sauce will burn. Then toss back in the pellet with some sauce.
