The hot sauce game seems to have only been evolving recently in Brazil beyond the standard cayenne and Tabasco types of sauces, at least in the northeast if not the entire country. I picked these up in the city they’re made in. I went through a bottle of the yellow in the three weeks I was there.

1.) Carolina Reaper Sauce: vinegar, Carolina Reaper pepper, salt, onion powder, garlic powder, citric acid, xanthan gum. VERY potent, with a bit of a sweet heat flavor.

2.) Yellow Pepper and Mustard sauce: vinegar, yellow pepper, salt, mustard powder, onion powder, garlic powder, citric acid, xanthan gum. Zesty mustard flavor combined with something like a pickled hot banana pepper, with a mild sweet note.

3.) Pepper Sauce with Passion Fruit: passion fruit, vinegar, yellow pepper, crystalline sugar, water, red pepper, salt, citric acid, lemon pepper, xanthan gum, sodium benzoate, sodium metabisulfate. Sweet, sour, spice. Makes me think of a very neutered Matouk’s Calypso sauce with the extra kick of the passion fruit. I’m definitely dumping this on some smoked wings.
