

Saw this beauty in a 1952 Texas newspaper while doing family tree research. Since I’ve only really heard of kippers in relation to Red Dwarf, they caught my eye.
Kipperoni was suggested on page 41 of the Sunday Wichita Falls Times on February 05, 1956, clipped recipe and full page attached, transcribed below:
“For a really nourishing and novel hot dish laden with body building vitamins and as tasty as it is easy to prepare, kipperoni (baked macaroni and Norway kippers) tops the menu. What’s more, Norway kippers are packed in flavor-preserving aluminum cans that are extra-easy to open. It’s economical, too.
INGREDIENTS
2 (6½ oz.) cans Norway kippers
(or 4 3¼-oz. cans)
1 (8 oz.) package macaroni
1 (size 2, 19 oz.) can stewed tomatoes
¼ lb. American cheese, sliced
1 cup milk
2 tablespoons butter
Salt and pepper to taste
Boil macaroni as directed on package. Remove from fire and drain. Butter casserole. Place layer of macaroni in casserole and cover with stewed tomatoes. Top with a few slices of American cheese. Repeat procedure, reserving Norway kipper fillets and 1 stewed tomato for top. Place stewed tomato in center and arrange kipper fillets around it. Pour over milk and season to taste. Dot with remaining butter and bake in medium oven for 30 minutes or until well browned.”
