My smoker ran out of pellets 20 minutes into this cook, really threw me off my game. I finally got to restart 30 minutes later, but I was all messed up on my timing. It should’ve taken 45 minutes total to cook, I was checking out every 10 minutes after it finally got back up to temperature just to be sure. 45 minutes after it restarted I checked the temperature and it was only 94°. But it looked like it was done already. Actually, it looked overdone. It was at that moment that I realized my instant rate thermometer apparently can be switched to Celsius mode, oops.

    Good news is, thighs love to be cooked to a temp between 190-200F so they look perfect to me.

    They’re thighs with good fat. I smoke at 250 and they’re awesome and moist. Just eat them.

    One piece of meat that is practically impossible to mess up. I do at 200 for 2 hours. Crank to 400 or 425 for 45 minutes and whalah, magic, perfect chicken thighs. One thing I’d do recommend in finding a good rub or marinade. Thighs soak it up and taste amazing.

    Be careful with that instant read. I’ve gone through two and it started giving off wrong / inconsistent temps both times

    Never panic about the chips or pellets my friend.
    It’s all about the low and slow in the end!
    As my wife always says when I smoke/ grill, “focus on the meat and the time!”
