Son of a BITCH! About 15yrs ago, when Dad and I started getting into sourdough (he’s brilliant with any bread dough he makes), he got me one of those things, along with some razors. I knew that I was to use it to slash the bread. I used the little handle thingy (lame, I know), and of course it didn’t slash the bread. I thought I sucked.
But, I didn’t know you’re supposed to put the razor on it like that.
FIFTEEN YEARS and TODAY I learn. My forehead is properly smacked.

Har! D. Har. Har.
Even worse some people call Bread Lame
In all seriousness though, I don’t like that style for anything but lower hydrations.

Well “lame” in French just means blade so they aren’t totally wrong, but also most people don’t appreciate ingenuity, too bad for them.
Gotta spend some bread if you want a good lame!
