Yesterday I had dinner at l’Écorce in Toulouse to celebrate my mother’s 50th birthday, and it was absolutely fantastic.

It was my parents’ very first fine dining experience, and they genuinely loved it, from the food to the overall experience. The restaurant is very young, having opened exactly six months ago in mid-July, yet it already feels confident and refined.

It doesn’t have a Michelin star yet, but it’s clearly pushing for one. The restaurant entered the Michelin Guide this past November, which feels like a strong signal of what may come next.

Chef Bertrand Millar is doing truly impressive work. He built his reputation by working in one, two, and three Michelin star kitchens, and it really shows in the precision, balance, and creativity of the dishes. He was also recently named Chef of the Year for the Occitanie region by the Guide Boullenger.

A wonderful and memorable evening, and definitely a restaurant to keep an eye on in the coming years.
