Didn't have any lunch meat but eggs. So egg salad sandwich did the trick plus an easy meal prep.

  1. I used 10 eggs and adjust the seasoning. Boiled in a pot, cover, turn heat off. Wait 15 minutes and put in ice bath.

    ▢12 large eggs

    ▢1/2 cup mayonnaise

    ▢1 tablespoon Dijon mustard

    ▢1/4 cup finely diced celery

    ▢1 tablespoon white vinegar

    ▢1/4 teaspoon white pepper plus more to taste

    ▢1 1/2 teaspoons Diamond Crystal Kosher salt plus more to taste

    ▢3 tablespoons green onion finely diced

    That looks super good! Do you bring it to work with you/have people around you for lunch? I’m scared to bring anything too smell heavy because it’s all open seating.
