French onion loaf might possibly be the best flavored sourdough I’ve made (and I’ve tried a lot) 😋
French onion sourdough loaf with caramelized onions, swiss, Asiago and grana padano Parmesan cheeses. I cannot find words to describe how delicious this is 😳

Ok! Recipe I used: First, caramelize onions. I used a GIANT sweet onion, but you could use 2 normal sized onions and 1T EVOO and 1T butter, sm. pinch of salt. Set aside to cool.
Next, make the dough: 100g ripe starter 360g water 30g honey 450g bread flour 50g rye flour (or you could use wheat, or all white) 10-12g fine sea salt 2-4Tbsp French onion dip or soup mix ( I used Kinder’s) (Adjust salt level to your liking. I did 12g salt and about 3T onion mix) *mix all ingredients as you normally would, I did 2 sets of stretch and folds, then incorporated the caramelized onions into the last 2 stretch and folds. Let it bulk rise and then when you do your pre-shaping, add 4oz Swiss or gryuère cheese cubed, 2oz Asiago and 2oz Parmesan, both shredded. Shape and cold proof overnight. Bake as you normally would, but last 10min sprinkle a little more shredded cheese on top.
Sorry, I realize a lot of people don’t need those directions in depth, but just wanted to share what my process was 🥰
ETA: I made a few typos in the recipe, but fixed them now!
