Found this little guy while clearing some weeds. What is he and should I remove him?

Definitely remove. That’s a grub and it and it’s bretheren will destroy your lawn/garden.

It’s a beetle larvae. Almost impossible to tell what type of beetle it will turn into. It could be a beneficial beetle. It could be a Japanese beetle. It could be one of thousands of types of beetle. Take that as you will.

Any I find I feed to the chickens
I don’t understand why so many people are saying it’s a beetle grub. Expanding the picture, you can see that it has legs all of the way to the end of it’s body. It is a cutworm, a type of caterpillar.
