  1. Kofta Ingredients:
    * 1/2 lb ground lamb (80/20)
    * 1/2 lb ground beef
    * ½ small red onion, grated or very finely minced
    * 2–3 garlic cloves, minced
    * Fresh parsley, finely chopped
    * ½ cup ripe tomato, finely chopped and well-drained
    * Ground sumac
    * Ground cumin
    * Ground coriander
    * Smoked paprika
    * Aleppo pepper or chili flakes
    * Salt & black pepper to taste
    * 1 tbsp olive oil

    🧅 Sumac Onions:
    * ½ red onion, thinly sliced
    * 1 tsp ground sumac
    * Pinch of salt
    * Small handful chopped parsley
    * Optional: squeeze of lemon or a splash of vinegar
    Toss onions with salt and sumac, let sit 5–10 minutes to soften. Stir in parsley before using.

    🧄 Garlic Labneh Sauce:
    * 1 cup plain labneh
    * 1 garlic clove, finely grated
    * 1 tbsp lemon juice
    * Salt to taste
    * Optional: drizzle of olive oil
    Mix all ingredients well. Chill for 15 minutes if possible for flavor to mellow.
