  1. I hate egg batter. I love everything else about the seasoning of this fish. My grandmother, my mother, and my aunts all southern women never used egg as a binder to hold the Cormill on the fish. And their catfish and any other fish they’re frying comes out perfect. Yes I’ve had the egg dip and just don’t like it. He has a couple of seasonings additions I will add to my prep. Thanks for the tips.

  3. This is the exact way my grandfather from Louisiana used to make his fried catfish. He even used a knockoff of your spider scoop to get it out of the oil. The only difference here is that he would slice the catfish a bit more and shake it in the flour mixture in a paper bag.

  7. Not liking a 'fishy' taste is a purely psychological hurdle. Many people that say that have never even tried fish on any level. These people are not only thinking way too hard, they're food cowards. I'm acquainted with several of these types. A close friend (75 YO) of mine refused to try cheesecake (cheesecake!!!) his entire life until a couple years ago. His comment afterward, "Oh my god, is that good! He, too, refuses to try fish because he just doesn't THINK he'll like it. To those fish-phobes, I suggest starting out with either a McD's McFish, or tilapia. Both are totally devoid of flavor or texture.

  8. Nice recipes, though I see zero reason to "counterbalance" the tartness of the acidic ingredients. Adding sugar to savory foods just ruins it completely. Would never cross my lips.
