• 200g diced celery
  • 200g diced carrots
  • 200g diced yellow onion 
  • 3 cloves minced garlic
  • 1 tablespoon fresh thyme 
  • 1 bay leaf
  • 8 cups vegetable broth
  • 1lb bag of dry split peas

– In a large pot, sauté the celery, carrots, and onion with salt and pepper until soft 

– Add remaining ingredients and simmer for 45min-1hr 

I often make this without the thyme or bay leaf and it's still so good to me. Such a simple recipe and crowd favorite among my family and friends.

Some additions — a side of sprouted wheat bread for extra protein. Or top with hemp seeds or pumpkin seeds for some healthy fats.

    Ooooh, we’ve got that Arctic blast coming in overnight. Gonna make a huge pot of this and ignore those temps. This looks so good!
