Day 16: Roasted Beetroot Salad
Beetroot is one of those vegetables that instantly makes a plate feel more alive.
It’s rich in antioxidants, provides fibre to support gut health, and contains naturally occurring nitrates that support blood flow and heart health.
I used a mix of beetroot varieties, and slow roast them until tender, then finish with a herby maple mustard dressing, labna, and crunchy hazelnuts for balance and texture.
