First time making pasta almost entirely by hand. I did use the imperia RMN220 to get the dough rolled out though.Filling is ricotta,spinach and mushroom.

    The first time a chef invited me to contribute to the menu we worked on a caramelle with a white bean filling.

    If you want to be a little more consistent with the sizing use a [bicicleta](https://www.katom.com/080-ADD5.html) or a ruler and knife (or just a knife). Cut your squares of pasta first then it’s very easy to give each one an even amount of filling by using the edges of each sheet as a guide.
