  1. A nice recipe, simple, quick and refreshing. I personally would prefer fresh whole walnuts (freshly pulsed to derive the maximum flavor). I would also check out other Olive oils, since you shop at Costco they have far superior olive oil options, in the same general price range. (That particular brand has had "quality & some past issues"). My personal preference is single source, EVOO. Costco own house brand is quite a good choice and is very reasonably priced as well.
