Recipe:
Soften a large sliced onion in butter and a little water, over low heat, for ~30 minutes. While it cooks, combine a tin of crushed tomatoes, salt, and a spoonful of sugar in a saucepan and simmer for 30 minutes, then gradually whisk in a healthy pour of olive oil to emulsify.
Blend onions and tomato sauce together until smooth. Add a few spoonfuls of Calabrian chili paste and a splash of cream. Adjust for seasoning and texture. Finish by whisking in several cubes of cold butter until the sauce has a glossy shine.
Toss with pasta and serve—or, if you want to get crazy, add the sauced pasta to a dish, top with Parmesan, Asiago, and breadcrumbs, and bake in a hot oven until the crust is golden and bubbly.
