I cut the ribs individually and let them get tender and juicy while they simmer in my homemade ranchera salsa made with fire-roasted tomatoes, onion, garlic, and chile morita โ€” the same flavors I grew up with. I add potatoes to make it extra filling. Itโ€™s the kind of meal that fills the house with the best aroma, brings everyone to the table, and tastes even better the next day with warm tortillas.
