I made this keto egg roll in a bowl using ground beef and coleslaw mix. It’s one pan, no added sugar, and fits under typical keto carb limits.

Ingredients
1 lb ground beef (85/15 or 90/10)
1 tablespoon avocado oil or olive oil
1 small yellow or white onion, diced
3 cloves garlic, minced
1 tablespoon fresh grated ginger (or 1½ teaspoons ground ginger)
2 cups plain coleslaw mix (cabbage-based, no dressing)
¼ cup low-sodium soy sauce (or coconut aminos for stricter keto)
1 tablespoon rice vinegar
1½ teaspoons toasted sesame oil
¼ teaspoon black pepper

Optional garnish
Sliced green onions
Sesame seeds

Instructions
1. Heat oil in a large skillet over medium-high heat.
2. Add ground beef and diced onion. Cook 7–9 minutes, breaking up the meat, until beef is fully cooked and onion is softened. Drain excess fat if needed.
3.Add garlic and ginger and cook 30–45 seconds until fragrant.
4. Stir in coleslaw mix and cook 3–4 minutes until cabbage is tender but not mushy.
5. Add soy sauce, rice vinegar, sesame oil, and black pepper. Stir well and cook 2–3 minutes until evenly coated.
6. Remove from heat. Garnish with green onions and sesame seeds if using.
