Some of my ingredients were getting a little ripe on the counter so I decided to toss together this “kitchen sink” salsa yesterday.

Ingredients
– 1/3 cup Neutral Oil – 1.5 cups Water – 20-25 raw Peanuts – 35 Arbol Chiles (Stems cut Off) – 1 Large Jalapeno (Diced) – 2 Ancho Chiles (Remove Stems / Seeds) – 1/4 White Onion (Julienned) – 4 Garlic Cloves (Large Dice) – 3-4 Tomatillos – 1 tsp Salt
Instructions
– Simmer tomatillos in the water for 3-4 minutes each side. Set aside. – Bring remaining water to boil then pour over Ancho chilies in a small bowl. Cover and soak for 20 minutes. – While anchos are soaking, heat oil to low / medium. Add arbols and peanuts, cooking for roughly 3-4 minutes. Make sure not to burn. – Remove chilies and peanuts from oil and add onions and diced jalapeno. Cook for 4 minutes, then add garlic and cook for additional 1 minute. Remove from heat. – Add onions, garlic, jalapeno peanuts, arbols, cooking oil, soaked Anchos, 1/4 cup of the soaking liquid, and 1/4 cup of fresh water to blender. Blend on high for 30-45 seconds. – Add in Tomatillos and salt and pulse until desired consistency is reached. Add more salt and/or bouillon to taste.

I’m also a fan of sesame seeds , it gives a creamy effect similar to peanuts and pairs nicely with the arbol.

I don’t typically add the ancho peppers to my Arbol salsa, but I think I will try that next. Do you feel like you can taste it over the arbol?
