I’ve been experimenting with high protein pizzas. I tried the ground chicken and oat flour crust, it was fine but tasted like chicken (surprise!). Then I tried a TikTok cottage cheese recipe and it was way too spongy and soft (pizza needs a crackle!). So I tried again and omitted egg yolks, added extra oat flour (more cals, more carbs but worth it I think), some corn starch (also more carbs but hardly), and baked it for much longer AND pan seared after cooling. It turned out great in my opinion. Looks like pizza, feels like pizza, tastes like pizza! This is only attempt #3 so more to come soon. I’ll put the recipe in the comments but the macros are:

    * Flip the crust over and bake for an additional 15 minutes (30 minutes total).
    * Add the pizza sauce, fat-free mozzarella, ham, pineapple, and jalapeños. Return to the oven at 400°F for 10 minutes.
    * Remove the pizza from the oven and let it cool completely.
    * Remove the cooled pizza from the skillet. Place the skillet on the stove over medium heat. Lightly spread the butter onto the hot pan and immediately return the pizza to the skillet.
    * Sear for 3–5 minutes until the bottom is crispy and golden brown.
    * Slide onto a cutting board and slice.
