
I just wanted to cook something different instead of eating boiled eggs again so i improvised with what i had in the fridge. in this omelette i have half a sweet potato, a red capia pepper, 4 broccoli flowers, and a handful of celery leafs. I diced them all in small pieces and cooked them in olive oil until soft, then added the eggs. Ate this with two slices of cheese, some olives, some cucumber and cherry tomatoes. It was a very filling breakfast!
