Same day blueberry 🫐 loaf!

500g white bread flour
80 g starter (1:1 ratio of whole wheat and rye)
8g salt
1 tsp of vanilla extract
0.5 tsp almond extract
60 g sugar
1 cup warmed frozen blueberries added in during coils folds

3 sets of stretch and folds 30 minutes apart
1 set of coil folds when I added in blueberries
5 hours BF in my warm microwave (no temp taken)

shaped then proofed for 3 hours

baked at 450 in a dutch oven preheated for 45 mins (35 mins lid on, 15 mins lid off)

    What do you mean by warmed frozen blueberries? How do warm them? I once tried using fresh blueberries and they exploded, it was a disaster 😅

    Looks amazing! Could you clarify your timeline (5 hours before…BF?) I’m actually right in the middle of prepping a couple of loaves for overnight proofing in the fridge but I’m running way ahead of time and would like to bake them today (never done same-day).

    I realize I never said my hydration level lol!! I used 350g water! So this loaf was at around 70% hydration and I used a stiff starter for this loaf.
