I was in Rome in October and i got the chance to go to Luciano Cuccina Italiana and eat their famous Carbonara.

Woah.. the Guanciale was super soft and crispy, the sauce rich and creamy (without cream ofc).

I highly recommend anyone who is planning to visit Rome to try and eat there.

    Alex the French cooking guy have some good Carbonara videos on his YouTube channel and even make one with Luciano showing how he prepare it.

    I watched a lot of Luciano’s videos while perfecting my carbonara (and cacio e pepe). Didn’t quite make it to his place while last in Rome though. Looks amazing.

    What I like is that the black pepper is very aromatic, not just spicy. I normally use Tellicherry, but the aromas are very different. Imho it is not just black pepper (also Madagascar?), but when I asked they told me it is just black pepper.

    /there I also had a very good roasted onion with miso.
