
I made mayak tofu and the vegan egg yolk sauce from Hot for Food and served those on top of a simple porridge made of oats, shiitake mushrooms, spinach, and miso paste. I also made sure to pour plenty of the marinade from the mayak tofu over the porridge for extra flavor. So satisfying, pretty healthy, and relatively easy (although I had to prep the tofu ahead of time). If you’re like me and you prefer savory breakfasts, you should definitely give it a try.

You might like my breakfast. I don’t know your stance on microwaves (but seeing as this is the vegan sub, i know I’m putting myself at risk 😀) but I love rolled oats cooked in one. 1 c oats to a scant 1 cup water, microwave 3 min. The oats come out with integrity, almost like rice. I top them with crumbled baked tofu, tamari, sesame oil, and chili crunch.
Is this difficult? I bought a Costco pack of tofu, so far I’ve ever used it for scrambles…which are easy
