Mumbai Style Vada Pav Recipe step by step
π₯ Ingredients for Vada:
Boiled potatoes β 4 medium Green chilies β 2 (finely chopped) Ginger β 1 inch (grated) Garlic β 5β6 cloves (paste) Mustard seeds β Β½ tsp Curry leaves β 8β10 Turmeric powder β Β½ tsp Salt β to taste Fresh coriander β finely chopped Red chili powder β to taste
π‘ For Besan Batter:
Gram flour (besan) β 1 cup Turmeric powder β ΒΌ tsp Salt β to taste Baking soda β a pinch Carom seeds (ajwain) β a pinch Cumin seeds β a pinch Water β as required
π₯ Method:
Heat oil in a pan, add mustard seeds. When they splutter, add curry leaves, ginger, garlic, and green chilies. Add turmeric, then mashed potatoes and salt. Mix well. Turn off the heat and add fresh coriander and lemon juice. Make round balls from the mixture. Prepare a thick besan batter. Dip the potato balls in batter and deep-fry in hot oil until golden.
πΆοΈ Dry Garlic Chutney:
Small boondi (made from besan) β Β½ cup Garlic β 8β10 cloves Red chili powder β 1 tbsp Salt β to taste Cumin seeds β a pinch
π Grind everything coarsely in a mixer.
π How to Assemble Vada Pav:
Slice pav buns in the middle. Spread dry garlic chutney inside. Place a hot vada. Add green chutney or tamarind chutney (optional). Serve with fried green chilies on the side.
