







26 inch weber kettle with the Hunsaker Rotisserie Insert, Woolly Bully insulated lid cover, 22 inch ceramic insert, Spider Grill Venom temp controller made easy work of a windy frigid day. In the wind the Venom kept temps within 15 degrees of 225. Like a pulse it would start at 224 and slowly rise to 240 then slowly drop to 224 and rise again. 4 hours in she locked in after the wind calmed and hugged 250 after wrap within 3 degrees for the remainder of the 12 hour smoke. Can't be more pleased with this setup. Tender, juicy, good smokey flavor and think I can easily get 14 to 16 hours if need be using the 22 ceramic insert in the 26 kettle. Last Pic my baby is saying please let me in. It's cold outside.
