Hi friends. My salsa chicken came out with a lot more liquid than intended. I took some chicken out of the salsa and shredded it for burritos, but everything that was left after than I am thinking of just eating it as soup? Is there anything else I should do to fix it?

The “soup” is currently chilling in the fridge with some aluminum foil over it, so it’s still not too late if there are any suggestions

    Personally I would make a corn starch slurry to thicken it

    To thicken it, maybe add some cornstarch while reboiling it? It’s kind of giving chicken tortilla soup vibes though.

    I find that serving “soupy” recipes over rice or pasta or a baked potato covers a lot of “sins”.

    I’ve had this happen to me so many times…I thicken a little with a corn starch slurry but I usually end up eating it with tortilla chips as a dip! (Dip-dinner?)

  6. I usually just use a slotted spoon to scoop out the chicken with the desired amount of liquid

    Or you could use a strainer, catch the liquid in a bowl, and add back in the amount you want

    Crunch up some tortilla chips to put on top and eat it as is.

    might be too late, but next time this happens, leave it in the slow cooker with the lid off for a while.

    or you could throw it in a pot, heat it back up to a simmer, add a little cornstarch and let it reduce. corn starch will thicken it up, and simmering will evaporate some water. works with flour as well, but i prefer corn starch. just note that the thickening properties of adding corn starch or flour really only work while it’s simmering.

    Take a fistful of tortilla chips and crumble them up — old chili thickening trick and I bet you have a bag of ’em ready to go already!

    I take the lid off, put a splatter guard over it, and let it reduce.

    There’s masa to make tortillas. You can use that like cornstarch to make a slurry. Or, crush up some tortilla chips and mix those in. Bonus corn chip flavor

    Simmer with the lid off until it reduces (if the slow cooker isn’t hot enough, move to a stovetop pot).

    Serve over rice

    Make a “pie” by topping with cornbread or biscuits and baking

    I’d put a fk-load of partially crushed up tortilla chips chips in the biiiiitch…and top it off with slices of jalapeño!!!

    I make a chili that uses a can a refried beans to thicken it. I think it would work well with this soup.

    Masa flour could help. Soak a well rounded tbsp in a half cup of warm water for 15 min. then add it and reheat to a simmer for 10-15 min.

    Strain it, capturing the liquid in a saucepan. Boil until reduced and then add it back to the chicken. Should take like 10 min, and it’ll concentrate the flavor

    It honestly works great as a soup. I’ve had it that way before. I’ll do a crappy “bread bowl” by putting a slice of bread in the bottom of the bowl before ladling. Rice also works.

    Poke and Microwave a potato for 5 min then pour over that

    Turn the slow cooker to high. Add crunched up tortilla chips in and cook until they integrate. Works like masa.

    pour tortilla chip crumbs in it and heat so they absorb the liquid.

    Add sour cream and four cheese Mexican blend and eat it with Fritos Scoops.
