I covered chicken thighs in pace salsa for 4 hours on high. I topped mine with sautéed onion and green pepper, mango habanero hot sauce, sour cream, lettuce, and pico. They would have been better with heated up tortillas but I was feeling lazy.

    I do this all the time and it’s tasty! 

    Tip: you can make a quick little sauce if you remove the thighs before shredding and use an immersion blender you can blend up the salsa and chicken grease with any spices you want. Shred the chicken, and turn the crockpot back up for 10 minutes-ish, add the shredded chicken back to the sauce and mix to coat the chicken.

    I did a 3lb flash frozen boneless skinless chicken thighs straight to the crock pot with 1.5 pack of taco seasoning and 1.5 packet of ranch dressing. Plus a splash of water with some better than bullion and an onion.

    It was moneyyy!

    I make mine with a can of corn, a can of black beans and a can of green chilli’s with whatever salsa I have. Highly recommend seasoning after shredding because the flavor never sticks when I add it before.
