I baked the chicken in the air fryer for 35 minutes at 380. Diced the chicken and put it in a huge bowl, mixed in the spinach and pesto sauce. Dished out into 8 servings, leaving room in each container for the frozen broccoli. The broccoli will defrost in the fridge overnight.

    As an alternative food prep, meat muffins, where you use minced meat, egg yolks, similar veggies, cheese, and cook 1hr 350f in silicone muffin trays, freeze in bags when cooled.

    I can make 2x 48 muffins in one afternoon, all from Costco, and have a meal while driving or very busy. They are tasty cold.

    I’ll probably use a blender all the ingredients when in my 80’s. For now veggies loosely chopped.
