– if your temp drops after frying up the first few steaks, wait a little until the oil comes back up to temp! You need your oil hot for a nice crust!!
Everything I season my flour with, i season my buttermilk with! You do not want bland steak!!
Ingredients – 2-4 cube steaks 3-4 cups of flour Salt Pepper Smoked paprika Onion powder Garlic powder
Buttermilk mixture – 2-3 cups buttermilk 1/2 cup hot sauce Salt Pepper Smoked paprika Garlic powder Onion powder
White gravy – 1/2 cup of oil drippings 1/2 cup of flour 4-5 cups of milk (depending on the consistency you want) Heavy handed on the salt pepper and garlic powder
How to: Start your marinade, in a bowl add your buttermilk, hot sauce and seasonings! Place in the fridge to marinate for one hour, the longer, the better.
In another bowl add your flour and seasonings, add your steaks in, cover very well in flour, dust off the extra and dredge in your wet batter and back into the flour!
Preheat some oil in a cast iron skillet to about 350° you want the oil nice and hot!! Lay in and fry up until nice and golden brown! About 3-5 minutes per side!! Don’t over crowd your pan! Temps will drop!
For the gravy:
Reserve about 1/2 cup of your oil, pour it in a skillet, add in some flour and mix until combined, add in your milk and mix until you’ve reached your desired consistency!! Salt, pepper and garlic powder.
