One Pan Creamy Peanut Sauce Chickpeas

    ###Ingredients

    * 1 tbsp extra virgin olive oil
    * 2 small shallots, finely chopped
    * 3 garlic cloves, finely chopped
    * 1 tbsp tomato paste
    * 1 tbsp coconut aminos
    * 15 oz can garbanzo beans (aka chickpeas), drained
    * 1 cup canned full-fat coconut milk
    * 1 tsp sea salt
    * ¼ tsp cayenne pepper
    * 1/3 cup creamy peanut butter
    * 2 cups baby spinach or kale
    * fresh cilantro, for topping
    * chopped peanuts, for topping

    **To Serve**

    * brown rice, naan, or sourdough

    ###Instructions

    1. Heat olive oil in a large skillet over medium heat. Add the shallots and garlic and cook until the shallots are soft and translucent, about 5 minutes. Add the tomato paste and coconut aminos, and stir to combine. Let cook about 30 seconds to caramelize the tomato paste.
    2. Add the beans, coconut milk, salt, and cayenne pepper. Stir well to combine.
    3. Stir in the peanut butter until completely melted Let simmer for about 10 minutes, stirring occasionally, until the sauce has thickened.
    4. Stir in the baby spinach or kale until wilted. Serve hot and enjoy!
