Ingredients



1 pound (16 ounces) fresh salmon filet
2 tablespoons extra virgin olive oil (divided)
4 ounces plain full-fat Greek yogurt
1/3 cup seedless cucumber, peeled and diced
1 tablespoon fresh lemon juice
1 teaspoon minced garlic
1 1/2 teaspoons chopped fresh dill
sea salt and freshly ground black pepper, to taste (optional)

I prefer to squeeze my own fresh lemon juice, but you can use bottled lemon juice in a pinch.

Use more or less sea salt and freshly ground pepper to suit your tastes.

Store leftovers in an airtight container in the refrigerator. Reheat in the microwave.


Here’s how to make it:



Place the salmon filet in a casserole dish or baking pan (I lined mine with aluminum foil for easier cleanup). Spread 1 tablespoon of olive oil over the salmon. Season with sea salt and freshly ground pepper, if desired.

Bake the salmon at 375 degrees F for about 15 minutes, or until desired doneness. Salmon is done when it reaches 145 degrees F on a food thermometer.

While the salmon bakes, prepare the tzatziki sauce. In a small mixing bowl or measuring cup, add 1 tablespoon olive oil, the Greek yogurt, cucumbers, lemon juice, minced garlic and chopped dill. Season with sea salt and fresh ground pepper, if desired. Stir to blend.

Remove salmon from oven. Spread a layer of tzatziki sauce over the salmon. Garnish with fresh herbs of your choice and serve.
