Grilled shrimp, coconut rice, and an avocado mango pico de gallo

    “Recipe:”
    – Shrimp: Grilled the shrimp on a grill plate for about 90 secs on both sides
    – Coconut rice: use whatever rice you prefer, but replace the water with coconut milk, add sugar to your liking (I used about 1.5 tablespoons), and a pinch of salt
    – Pico de gallo: avocado, mango, tomato, serrano/jalapeno, onion, lime, salt, cilantro, salt. Pineapple would also be good instead of mango
