
Woke up this morning, and saw a high of 20 degrees. Sure why not, let’s smoke some ribs and let it rip. 225 for 7 hours, with an extra charcoal dump at the end to crisp them up. Made me consider purchasing one of those insulated covers for future winter cooks, but I made this one work. Happy cooking Weber people.

That looks fire! I’ve been eyeing those insulated covers too after fighting to maintain temp on a cold, windy day last winter. It’s a game-changer for sure.
