Just to be clear, this is not mazesoba or tsukemen.

In my mind, and soupless noodle made with ramen noodles is the same category whether it’s called aburasoba, mazesoba or any variation. In the end it’s a dry noodle dish made with alkaline noodles and a strong flavor base at the bottom or premixed in the noodles before serving.

What exactly makes this one not mazesoba or aburasoba? Is it concentrated ramen broth that you mix? If so then I think it’s similar to other mazesoba dish you can find in other noodle shops. Really not trying to be an AH, just genuinely asking for curiosity. 🤓

Soup-less ramen is such a flavor bomb because nothing gets diluted. All sauce, fat and noodle texture in one hit.
