Alright Austin, I need help understanding something.

I visited Austin over the holiday (but lived here for 4 years) from Southern California, a place that many of you rightfully roast, and yet we somehow figured out pastrami chili cheese fries and carne asada fries years ago.
Big. Messy. Filling. Feeds a small family. Costs like $12 – $15. Incredible value.

Meanwhile, Texas, the undisputed king of brisket, has no brisket fries?

You’re telling me we can smoke a cow for 14 hours, but putting chopped brisket on fries with cheese and maybe some sauce is too much to ask?

Brisket plus fries feels like the most obvious food combination imaginable:
Amazing meat
Crispy potatoes
Cheap, filling, drunk-food friendly
And somehow not a thing

This isn’t an attack. This is a genuine question.

Is there some historical reason? A city ordinance? A secret menu I don’t know about?

Austin food people, please explain yourselves or point me to the brisket fries I’m clearly missing.

Brisket is a high cost meat. Nobody’s gonna pay $30-40 for brisket fries.

Brisket is a peacock and you gotta let it fly.

I’m all for fries when the meat needs support, but brisket is a main.

  3. Bobcat2013

Would be a waste of brisket. Brisket is so good on its own.

  4. That looks worse than it will going out the other end…

Get that cheese off that brisket before someone punches y’all in the face. This is a stand your ground state, son.

  6. Least_Data6924

Because you’re supposed to put chili on the fries not brisket

  7. Zingerman99

What an absolute waste of brisket. Just say NO to this garbage.

You should have gone to Moreno BBQ and ordered the brisket nachos. Tortilla chips, not fries, in Texas.

  9. because we have nachos, there’s no need to bring potatoes to the party

Many spots have Brisket Frito Pie, that’s their version.

Brisket over bagged shredded cheese is awful

  12. OPPyayouknowme

There is plenty of brisket fries. Just not of that serving size. I would check out the loaded tots at lustre Pearl east

Neither of those are an appealing representation of what youre suggesting m8(weak ass cheese, bacon bits, ground beef instead of brisket). Carne asada fries from T locs are fire and brisket nachos from Slab are pretty good too.

because brisket deserves better than to be stacked on french fries and drowned in sauce/toppings

If these photos are example of what brisket fries look like, I pass

Cuz those look nasty. I wouldn’t eat that slop if it was free

That looks like a bad plate of food. I like chili cheese fries, and even just cheese fries. But the cheese needs to be melted. Who wants little shreds of cold cheese on their fries?

  18. BulkyCartographer280

Coming in saying that Austin doesn’t know what to do with brisket and California does is bold.

I’m not against the concept of brisket fries, but holy hell those are some of the most unappetizing pictures of food I have ever seen. I’m not convinced that this isn’t a troll/ragebait post.

Also what the fuck is this ChatGPT formatted post? It literally reads like an AI prompt response.

That is disgusting in so many ways. I ate plenty of gravy fries at bowling alleys in the 80’s and that was nasty, but better than that un-melted cheese, pile on top lunch meat.

Holy shit, why the hell would we disgrace a great brisket by mincing it up and dumping it on fries and throwing cheese on top?

I love French fries but Goddamn, son.
