Please feel free to lynch me for breaking the rules of not having carcass bones in the broth. Purist or not – this was quite nice and felt very fresh.

The broth was made with heavy roasted onion, ginger and shallot. Seasoned it with roasted spices (bark of cinnamon, coriander seeds, clove, black cardamom and star anise). Also added some dried shiitake mushrooms, soy and veg. fish sauce.

Rice noodles and for toppings I had tofu, beansprouts, soymarinated mushrooms, green onions, fresh herbs (coriander and mint), chili and some lime.
