For anyone wondering how the Searwood does in below freezing, it shakes the cold off like nothing

Just doing a quick smoked salmon, but this was also a test. It's 10 degrees F outside and two feet of snow on the ground with more coming down.
I put a separate probe just to measure ambient temp and its actually running a bit higher than 180, but its holding temp well. No blanket, nothing extra and she's running as if its 72 outside.
