    Sichuan type noodles is one of our favorites and regular dishes I make at home, for close to a decade.

    I actually make it a bit more soup like and add tomatoes a bit like a bolognese these last few years.

    It really goes well together. I use good quality peanut butter instead of sesame paste (cheaper).

    Absolutely delicious.

    Make sure to quickly heat up the peppercorns on a pan before grinding them for extra flavor for only a minute extra.

    looks great. reminds me of the xiao mien i loved in chongqing. you can use chick peas as a sub for the yellow pea topping they use. super good.
