will this work for stuffed shells, lasagna or baked pasta dishes?
Is the bottom of that pot a zipper?

Is soaking necessary? I used to cook something similar except without soaking when I was a student. With a 45m to 1h cooking time and enough liquid the pastas came out properly cooked.
The only way I know of to get ricotta without stabilizers is to make it myself. I have that same little cheese drainer for when I make mine. I use Chef John's ricotta recipe. Very simple. I also quit buying cream cheese due to all the stabilizers and make my own cream cheese with homemade ricotta. How? I add heavy cream and whip it with a hand mixer.

I've been doing something similar for baked pasta dishes for a while! For baked mac n cheese, instead of pre-boiling, I usually just make the pot of sauce first, then pour in the pasta after. Barely boil it for a minute or two before I put it in the oven. It's made for a really nice texture.

My opinion on the Schitt’s Creek/John C.Reilly clips: I wasn’t familiar with either of these clips, and didn’t really get a laugh out of them.
Reading the comments, it does seem like I’m in the minority with how I feel, but I prefer my references to come from Kenji while he’s cooking. If I get the reference, great. If I don’t get the reference, I’m still watching the cooking, but the “show” didn’t stop while it was happening.
Another great vid. Find myself wondering if a similar soaking technique would work for split pea soup, and similar, to cut down cook time and improve flavor. Thoughts?
JUST FOLD IT!! lol, i think about that scene every time i make corn bread because that's percisely what you do with my recipe. You don't stir stir stir. You fold it to avoid over mixing. clear as MUD.

I don't think you really even need to soak them. Just throw them in the sauce and bake.

I do this for lasagna noodles! Cooking them ahead of time is such a pain because you have to find the tallest (or widest) pot, and some always break, so now I just put them in a 9×13 pan with some hot water for a while.
Could this method be applied to lasagna?
When Kenji pushed the spoon in the dish to get some on the bowl, I thought to myself "that's insanely hot, do not go even near it with your mouth" but of course he dug right in.
This has so much cream and cheeses that it'll take a long time to eat through if you're modest in your servings. Perfect if you don't care to cook all the time.
Why soak pasta? Is there any difference if I just put dry pasta into the sauce with some extra water, like Ragusea did? 45 mins in oven is plenty of time to cook AND hydrate.
You and Chef Jean Pierre crack me up with your facial expressions when eating too hot food. Soaking the pasta is a genius idea. It can save time and a big pot to clean. I wonder if that technique were to work with Mac & Cheese? Soaking the pasta with heated milk or cream?
