In traditional pretzels you don’t brush the tops with anything. The color comes from the lye bath they are boiled in. Understandably that can be dangerous to use in your kitchen but if you do a baking soda boil instead it still gives enough color and texture that you don’t need a wash.

Why do I have to give you my email address if I want to save this recipe? I saved it by other means but it seems like a very invasive thing to make people do just to get a print of a recipe.
