

New to charcoal/smoking in general. This is my first charcoal grill ever.
I have only smoked chicken thighs and chicken drumsticks so far on the SJ.
I could rarely fit the whole rack on there even cutting it in half and the rack was on the smaller side, but I don't need much space since I'm usually cooking for 2 people only.
Next up is a whole chicken

I just want to know how you handled the coals? Did you just put them in a pile and light from one end or what?

If you’re going with a chicken on an 18″ SJ, try doing a spatchcocked chicken. Your local butcher can do that for you.Tell the butcher that you are grilling for two on an 18″ grill. What space you don’t use for the chicken, use for your coals. Plan on rotating the chicken 180° 3/4 of the way through your cook. Use a temp probe for the breast and an instant read thermometer for the thighs and legs. Let us know how it goes. Love grill’n for two. BTW, your ribs look awesome!! Happy grilling and smoking.
Looks good man! I still use mine for quick smokes even though I have a bigger kettle. It takes some practice with temps but you’ll learn it quick. For the whole chicken, spatchicking it will help it cook more evenly and fit better. Keep the temps low (225-250) and expect it to take a while, just like the ribs.
