How can i get macarons to get this dark color

    My experience with deep shades like this is needing a lot more coloring than I would have thought. Because of how much color needs to be added, I’d go with powdered color so it’s not adding too much liquid to the batter.

    Unless you’re doing the Italian method in which case you could use water based gel or drops, into the syrup step of the recipe.

    That being said this looks like a deep dusty purple blue. To mute a color in this way, you add a bit of the color opposite in the color wheel. My guess with this color, unless you find a premade exact match, is to mix mostly deep purple, bit of yellow, and a touch of black.
