
I used to be vegan and anemic. I learned that you never want to consume iron rich foods or an iron tablet 1-2 hours before or after drinking coffee or black tea. It will block the absorption of the iron. Also, take iron tablets with vitamin C. I was eating kale and beans in a cast iron skillet then cancelling it all out with black coffee. Doh!
