I adore beef stroganoff. It is one of those recipes that are very forgiving, and nothing needs to be exact. Use ground beef, or leftover steak, or a can of roast beef in broth. No need to overthink it. Salt, pepper, and garlic. Yum! Before carnivore, I usually used a mix of sour cream and cream cheese. Love the tang of sour cream and the added thick creaminess of cream cheese (or reduced heavy cream) I will continue to use both. Sprinkle with fresh parm. Mmmm this is on my meal plan this week! I have Hashi's as well, and for whatever reason, dairy does not bother me. I dont go for it a lot, but glad I dont need to omit.
As for the "noodles", I plan to make your crepes. I want a few more options to choose from, and this looks doable to me and I love the other ways to use them (as wraps, for "cinnamon rolls", etc). However, for a very quick noodle, I cut up Egglife Egg wraps. They make noodle shape, but I never see those anywhere. SO I cut up a couple wraps. Works really well. At least creating a noodle provides some visual interest and texture that is reminiscent of the noodle experience. Someone mentioned just putting the meat over a scrambled egg. Ok, sounds good as a meal, but that isnt what the recipe is trying to mimic, and that is what I want. Easy crepe recipe (or cut up egglife wraps) will plate nicely and provide that mouthfeel.

I tried sardines. I used to think fish was disgusting but i liked them. the problem is I instantly had either a histamine or an allergic reaction and may have triggered my hashimotos. my lymph node on my neck swelled, i felt pain in my mouth and on my tongue, i got blisters on my tongue and rashes all over my body. :/ plus brain fog and diarrhea. :/. i just had a bite.
Looks absolutely amazing! Yummm! Just wondering about the enzymes and good stuff in the raw sour cream which is killed off when it's heated… Doesn't that defeat the purpose?
I make a keto Stroganoff using Cream of Mushroom Ketochow as the base and Egglife wraps for the noodles.
I've made stroganoff with the sour cream many many times that's the only way to do it. I didn't know you can make noodles like that I just ate it.

This creamy sauce is my standard for almost all meats. But it is NOT Beef Stroganoff. Stroganoff is never made with minced beef. Onions, mushrooms, pickles and white wine are NOT optional. And there is never any flour in it, it is low carb by design.

I've been preping for Carnivore and have watched a lot of vids esp those w/ "pasta". Some vids talk about an "eggy" taste to the "pasta/noodles". Anyone that has tried this, do the noodles taste "eggy"?

Maybe with the cream version, instead of adding less broth, you could simmer for a while to reduce it – like you did with the cream cheese one, but adding the soured cream after reducing (surprised you didn't do that with the cream cheese version, actually) xx

Awesome recipe. I will definitely try this weekend. FYI for those making carnivore sauces like this and others, you can use Beef Gelatin as a slurry to thicken your sauce. 2 tablespoons of cold water, 1 Tablespoon of Gelatin, let sit 5 mins, do not stir, you will come back to a paste, add a bit of your sauce to kind temper it, then add that to your sauce it will thicken in no time.

I have had Hashimotos for 24 years. I had no idea I shouldn't have cheese!😱. But then just last month I got very sick and my thyroid flipped to Graves disease.😩. That is when I found out I shouldn't have too much cheese. So I will just cut back. (So annoying)

You NEED THE PAN AND FLIPPER. I am not carnivore. I am lower carb and gluten-free however I add a tablespoon of finally ground nutritional yeast and 1 tablespoon of arrowroot to my one cup of egg white and 2 tablespoons of beef gelatin. I make these wraps every couple weeks I’ll make 30 to 40 of them and freeze them in Ziploc bags with 8 to 10 each bag. They’ve been as complete game changer and this will be the third year that we’ve been eating them.

I was just telling my husband I wanted to figure out how to make Carnivore Beef Stroganoff.
My family loves stroganoff & have said how much they miss it. I use a little Dijon mustard in mine. Other than some white wine it's very similar. So I guess no wine from now on. 😉
I usually use sirloin or London broil. So I was glad to see you use ground beef. Because that's what we have all the time. 😊
I wonder if you could use a good unflavored grass fed beef protein powder to thicken the sauce. 🤔

Anita at Ketogenic Woman has a similar "noodle" recipe, however, instead of making crepes, she pours the mixture into a silicone sheet pan and bakes it briefly. Then removes from pan, roll up, slice however thick you want your noodles to be. They were easy to do, I just didn't like the foamy egg texture.
once you cook the raw sour cream it is no longer raw and does not have any of the benefits of raw dairy. Seems like a waste of money…

I just have to start cooking again. Ribeye and eggs, and hamburger and eggs is just tooooooo easy , delicious and convenient!!! But I'll get there, I used to cook, but that air fryer just makes everything soooo good!
