Noob question here. I bought these beef cheek from an online supermarket. Are they already trimmede and separated from the fat cap? In the video from LeRoy and Lewis they can easily peel the cheek apart from each other but I can’t do that with mine so I came to the conclusion that they have already undergone this step. Am I correct?

  1. I’d say so. The top one maybe has a little sinew but I’d be happy cooking as is. What are you making with the cheeks?

    yes. if they weren’t trimmed they’d have another big flap and a bunch of fat and sinew. to be honest if i’m smoking them for chili or barbacoa, i don’t even trim them at all

    Honestly if you are going to barbacoa and or confit them you sorta don’t even need to trim them. Even the silverskin breaks down

    I cook a lot of beef cheeks and these things have been trimmed and cleaned very nicely. They are ready for seasoning!
