

김치찌개 has been one of my ultimate comfort foods in the 5 years I lived in Korea. Except the part where I had to constantly order it with “고기 빼주세요~~^^“

Five years in Korea and now making it at home — that’s when you know the food truly got to you haha.
For the meatless version, one thing that made a huge difference for me was using really old, sour kimchi — the kind that’s been sitting in the back of the fridge for months. When it’s that fermented, the depth of flavor kind of fills in for the pork. A splash of the kimchi brine straight into the broth helps a lot too.
