    recipe serves 4

    blend alfredo sauce:
    – 1 cup low fat cottage cheese
    – 1 cup low fat milk
    – 1/2 cup parmesan (sub nutritional yeast and some olive oil)
    – 1/2 tsp salt
    – 1 tsp cornstarch
    – seasonings like garlic, black pepper and thyme etc

    cook 8 oz high fiber (or regular) pasta, drain

    saute diced turkey/chicken (300g here) and mixed frozen veg (170g here) with 1 tbsp oil

    stir in pasta and sauce

    cook until sauce thickens

    serve and enjoy!

    I make fiber gourmet pasta alfredo all the time…I eat it with poached salmon mostly and some side veg. I make the alfredo sauce by mixing Classico Alfredo sauce and a couple tablespoons of parmesan. A 15 ounce jar is only 350 calories…and a half jar is plenty for 8 ounces of uncooked pasta. There are a couple of these pre-made sauces that have like half the calories of the others…it has no sugar or added vegetable/seed oils…pretty clean product. I heat/reduce the sauce and parmesan in a pan and add the cooked pasta and cook few more minutes…so good and easy. (8 oz pasta 440 cals, sauce 225 cals)
