It's not a kamado Joe but I believe joes could also have this problem. I'm not sure which of these two are correct, I have a thermometer probe hanging in the kamado and it's touching nothing, only in the air

Honestly, I go by dome temp.
I noticed a difference in grate temp and dome temp few cooks ago. So i started cooking by grate temp, and my cooks turned out awful with temp swings and me fiddling with the vents, and me worrying all the time.
So I no longer measure the grate temp, and just go with dome temp. I don’t think the dome temp is off or anything, I just think it’s just how differently the Kamado are built and how they retain heat, vs a metal on metal smoker.
So just use the dome for temp, go with my instincts, and my smokes have turned out fantastic.

The one you calibrated is accurate.
